Tetley Creme Brulee

Ingredients

5 egg yolks
3 eggs
4 oz. brown sugar
2 1/2 cups 35% cream
1/2 tsp. salt
1 tsp. vanilla extract
5 bags Tetley Tea Cup Bags tea
8 3 oz. ramekins

Directions
  1. Combine cream and teabags in a saucepan and bring to a boil
  2. Remove from heat and let steep for 10 min
  3. Squeeze tea bags in cream and remove
  4. In a separate bowl, whisk eggs, egg yolks and sugar until smooth
  5. Pour hot cream mixture over egg mixture slowly while whisking until fully incorporated
  6. Strain mixture through a sieve into individual ramekins
  7. Place ramekins in a water bath and bake at 350degrees for about 20 minutes
  8. Cool completely
  9. Cover with sugar and use torch to caramelize sugar (or the broiler of your oven)
